Vanilla Overnight Oats and Chia Seeds

During the warmer months, I just don’t really fancy eating porridge. Yet I know how good oats are – rich in complex carbohydrates, full of fibre plus some protein and antioxidants – so I don’t want to abandon them for any long period.

Overnight oats are the answer!

This recipe is so incredibly quick and easy to prepare.

The addition of chia seeds adds some Omega 3 goodness (healthy fats) and extra protein.

You can play around with the toppings and if you find you need a bit of extra sweetness, you can stir in a teaspoon of honey or maple syrup.


Vanilla Overnight Oats and Chia Seeds

  • 1/3 cup of jumbo oats
  • 2 teaspoons of chia seeds
  • 1/3 cup almond or other type of milk
  • 2 tablespoons Greek or coconut yoghurt
  • 1 teaspoon of vanilla essence
  • Handful of berries or other chopped fruit
  • 1 tablespoon chopped nuts or seeds (almonds and walnuts are my favourites)


  1. Combine the oats, chia seeds, milk, yoghurt and vanilla essence in an old jam jar or a bowl and stir well – you don’t want the chia seeds all to sink to the bottom and stick. Cover the jar or bowl and leave it in the fridge overnight. When you are ready serve, top with your favourite berries or chopped fruit and a tablespoon of chopped nuts or seeds.
