I’ve had a few green smoothie disasters in my time. I cannot make broccoli or courgette into any kind of smoothie that is vaguely drinkable. Hence, I tend to eat lots of these vegetables or use them for juices or in soups. My go-to greens for smoothies are cucumber, spinach, kale (but you have to remove the stalks and use the leaves only) and avocado. My secret ingredient is fresh mint. I keep a stash of it in the freezer just for adding to smoothies. I also keep chopped up frozen bananas to add sweetness and creaminess.

Ingredients
- 200 ml of coconut or tap water
- 100 ml of almond milk
- ½ frozen banana, chopped into smaller chunks
- ¼ small avocado, peeled and destoned
- 4cm piece of cucumber, peeled and chopped
- 1 large handful spinach or kale leaves
- A few mint leaves
- 2 scoops (or 20 grams) of vanilla protein powder
- ¼ a teaspoon of matcha powder (optional)
Instructions
- Peel and destone the avocado. Peel and chop the cucumber. If using kale, pick the leaves off and discard the stalks.
- Add all ingredients to smoothie maker or high speed blender and blend until smooth.
- Pour into a large glass and enjoy.
