A decadent dessert that you can whip up really quickly and impress your dinner party guests with.
Cardamom & Chill Vegan Chocolate Mousse
3 cardamom pods
200ml almond or other non dairy milk
6 medjool dates
80g dark chocolate (minimum 85%)
1/8 teaspoon chilli powder
Lightly crush the cardamom pods and remove the seeds. Add the seeds to the almond milk (ideally let the seeds steep in the milk for an hour or two before starting the next step).
Melt the dark chocolate in quick blasts in the microwave until completely melted. Allow to cool slightly.
Remove the stones from the dates and add to a high speed blender along with the cardamom infused milk. Blitz until completely smooth then add melted chocolate and the chill powder. Blitz again until smooth and creamy.
Spoon the mousse into 2 or 3 dessert bowls and chill for a few hours before serving.
