Butter bean and thyme hummus

  • 400g can of butter beans, rinsed and drained
  • 2 garlic cloves, peeled
  • 2 tbsp coconut milk or yoghurt
  • 1 tbsp tahini
  • 1 tbsp extra virgin olive oil
  • 1 tbsp fresh thyme leaves
  • Squeeze of lemon juice


  1. Put all the ingredients, except for the thyme leaves, in a high speed blender or food processor. Blitz for about 2 minutes until smooth and creamy. Season with salt and pepper, add in the thyme leaves and blitz again.
  2. Tastes fab spread on sourdough toast, with some rose harissa, a few slices of avocado and rocket.
