Butter bean and thyme hummus

Ingredients
- 400g can of butter beans, rinsed and drained
- 2 garlic cloves, peeled
- 2 tbsp coconut milk or yoghurt
- 1 tbsp tahini
- 1 tbsp extra virgin olive oil
- 1 tbsp fresh thyme leaves
- Squeeze of lemon juice
Instructions
- Put all the ingredients, except for the thyme leaves, in a high speed blender or food processor. Blitz for about 2 minutes until smooth and creamy. Season with salt and pepper, add in the thyme leaves and blitz again.
- Tastes fab spread on sourdough toast, with some rose harissa, a few slices of avocado and rocket.
