  • 1 tsp chipotle paste
  • 2 medium size eggs
  • 50g kale or spinach
  • 1 tsp olive oil
  • 7-8 cherry tomatoes, cut in half
  • 1/2 red pepper finely sliced
  • ½ small avocado, cut into slices
  • 1 wholemeal or seeded tortilla wrap (warmed) or a slice of sourdough or other bread
  • Optional - chopped parsley or coriander to serve


  1. Whisk the chipotle paste with the eggs and some seasoning in a jug. Heat the oil in a large frying pan, add the kale or spinach and tomatoes.
  2. Cook until the kale or spinach is wilted and the tomatoes have softened, then push everything to the side of the pan. Pour the beaten eggs into the cleared half of the pan and scramble. Layer everything into the centre of your wrap or on top of your bread of choice, topping with the avocado, then wrap up and eat immediately.
