There is a lot to love about beetroot!
Packed with essential nutrients, beetroot is a great source of fibre, folate (vitamin B9), manganese, potassium, iron, and vitamin C. All good stuff as far as energy is concerned. Celery also packs a powerful nutritional punch, despite being mostly water. It’s full of antioxidants, high in fibre and it’s one of the most alkalinising vegetables around, so it can help reduce inflammation in the body. The recipe calls for 4 celery stalks, but I also throw in the slightly tough bits from the bottom and the leafy inners. The addition of lime helps to boost the vitamin C content. And ginger? Well, you can never have too much ginger, it’s that good for you. The flavours work really well with the tartness of the lime and spiciness of the ginger tempering the sweetness of the beetroot.
