If you normally have a salad made with green leaves, switch things up a bit with this courgette salad. It’s great on its own or can be accompaniment to a Middle Eastern type meal such as falafels or lamb koftas.
Courgette, Cumin & Feta Salad

Ingredients
- 1 large or 2 small courgettes
- 1 tablespoon olive oil
- 1 teaspoon of cumin seeds
- 1/2 teaspoon chilli flakes
- 50g feta cheese
- Dressing
- 2 tablespoons olive oil
- Juice of half a lemon
- 1 teaspoon capers
- 1 tablespoon plain yoghurt
Instructions
- Slice the courgette into 1/2 cm rounds.
- Heat a non stick frying pan and dry fry the cumin seeds at a medium heat for 2 to 3 minutes.
- Add a tablespoon of olive oil to the frying pan then add the chill flakes and fry for a further minute.
- Add the courgette rounds and fry for about 5 minutes on each side until they are starting to turn golden brown.
- Remove from the heat and arrange on a plate. Crumble the feta cheese over the top.
- To make the dressing, whisk all of the dressing ingredients together.
