Courgette, Cumin & Feta Salad

If you normally have a salad made with green leaves, switch things up a bit with this courgette salad. It’s great on its own or can be accompaniment to a Middle Eastern type meal such as falafels or lamb koftas.

  • 1 large or 2 small courgettes
  • 1 tablespoon olive oil
  • 1 teaspoon of cumin seeds
  • 1/2 teaspoon chilli flakes
  • 50g feta cheese
  • Dressing
  • 2 tablespoons olive oil
  • Juice of half a lemon
  • 1 teaspoon capers
  • 1 tablespoon plain yoghurt


  1. Slice the courgette into 1/2 cm rounds.
  2. Heat a non stick frying pan and dry fry the cumin seeds at a medium heat for 2 to 3 minutes.
  3. Add a tablespoon of olive oil to the frying pan then add the chill flakes and fry for a further minute.
  4. Add the courgette rounds and fry for about 5 minutes on each side until they are starting to turn golden brown.
  5. Remove from the heat and arrange on a plate. Crumble the feta cheese over the top.
  6. To make the dressing, whisk all of the dressing ingredients together.
